Every day when we’re fishing for silver salmon on Alaska’s Egegik River we try and have a fresh shore lunch. We prepare fish many ways, from chowders to tacos, stir fries to fried. When back at the main lodge we have fresh salmon almost daily. Here we’ll smoke salmon bellies and collars, drop chunks into the deep frier, cook it up on a pellet grill, or cook that salmon any of a number of ways.
This clip shows how to prepare a fresh salmon fillet for one person. The rest of the meat from this fish was filleted off the skin, the belly meat saved for smoking back at the lodge, and the eggs removed for curing and fishing. The meat left next to the skeleton was removed with a spoon and cooked up in tacos; these bits of meat are also great when cooked in burritos and stir fries. Every bit of this fresh fish is consumed, and believe us, it doesn’t get any better than this!
