There are a lot of ways to remove skeins of eggs from salmon. This is one option we like to use when catching fat silver salmon on Alaska’s Egegik River. The eggs in these salmon are well developed, and we don’t want to damage them during the removal process. This is a great approach for removing the fillets, salmon eggs and belly meat. The skeletons of the fish can be smoked, or the meat scraped off with a spoon to be used in tacos, fajitas of stir-fry.
